The new Open Graph system does have a step or 2 more to do what you're looking for. The main thing you need to do is install the new Open Graph - Content plugin which is part of the main JFBConnect download package. Just unzip it and install any Open Graph plugins for extensions you have. Once you enable them, the image will automatically be inserted as an Open Graph tag.
The new system also lets you set configuration options on a per-category basis. For example, in one category, you can set a specific image while in others, you can use the first article image in the text. You can do that by creating an "Object" and set the parameters for that category.

It is a little more complex now, but the Actions capability is an awesome new feature.
