I just tried to register and was sent through the "Normal" registration process of JFBConnect where extra fields can be asked of the user. It sounds like you want the "Automatic" registration process, which can be set in the Configuration area of JFBConnect.

Also, if the email field was being shown, that likely means that the user logging in with Facebook already has an account in the system with the same email address. In that case, we 'blank' that field out so they can enter a new one. You may want to also enable the "Automatically connect users by Email" setting in JFBConnect to automatically link new Facebook accounts to existing Joomla users on your site.

Finally.. I just went through the registration process. None of my data was imported from Facebook, including avatar or cover photo. To really integrate with JomSocial you should enable the Social Profiles - JomSocial plugin in Joomla and then configure how you want data to import in the JFBConnect -> Profiles area.
