I have another component that is also putting Twitter Card meta tags. I prefer that component since it supports many types of Twitter card types... so how can I disable the twitter card meta tags produced by JFBC since the two sets are causing conflicts in the validator?

JFBConnect v6.2.4 adds the ability to skip specified Open Graph tags. If you go into JFBConnect > Open Graph > Configuration, please set the 'Skip Tags' setting to
twitter:title,twitter:card,twitter:description,twitter:image

These tags are the only ones that we should be attempting to set for Twitter, but let if you encounter any others, please add them to the skip tags setting. Just make sure that it has the "twitter:" prefix so you don't skip any FB open graph tags of the same name.

That sort of works... but then puts "SKIPPED" in the tags anyway - that is... they're still there...

Please see screencast.com/t/W2FVynPTZ5SM

How do I get rid of them completely?

If you look at the source, those are actually from the social toolbar at the bottom of the page for when you click the social meta button. This toolbar is only displayed for superadmins and can be disabled in the general configuration area of JFBConnect.
