1) For the Facebook Canvas, it's a way to show your Joomla site 'inside' a Facebook.com address. You can see our example page below:

That page is loaded from
www.sourcecoast.com/jfbconnect/ , but we've actually copied the 'main' template to a new one. Once there, we made some minor modifications to change the width to 740px instead of the ~1000px on the live site. It's a pretty simple process, that also allows you to change module position names so that you can really make the whole template layout and flow differently if you wanted too.
2) Simply copy what you have to a new template, and once there, you can change the names of the module positions. This is different for each template, but usually they can be found in the index.php file. Once renamed, you can add (or remove) whatever modules you want from those positions.
3) We don't supply any with JFBConnect. We're looking into possibly including a few default 'plain' templates, but have not done so yet.

There's a few components that can do a little bit of integration with Facebook Photos, but really haven't found anything great yet, or we'd recommend it. It's something we do want to look into in a future release, but can't give any sort of timeline as to when that may happen.
