I'm wondering how I would change the title, description and other details that displays inside Facebook when someone likes my site? Currently on my site there is a picture, page, title and description that I am no longer using on the website (not in the title, meta data or anywhere else) but I cannot find where to edit what displays inside of Facebook when someone likes my site.

I have cleared my cache, disabled AceSEF and still no luck.

The website is Stateofredband.com

Using Joomla 2.5.4

You'd need to use the Open Graph features of JFBConnect to set that information. In the Social -> Open Graph area, you can set 'defaults' that are used on any page of your site. Then, on specific pages, you can add tags like the following to force the right values for that page:
{SCOpenGraph title=Title for Page}
{SCOpenGraph description=Description for Page}
{SCOpenGraph image=http://site.com/image-for-page.jpg}

These instructions are for the 4.2 release. I'm not sure what version you are using since your subscription has expired. Open Graph support is continuously improving with each release.

Thanks - I had v4.1 but just subscribed again and upgraded my install to 4.2.1

I added the following to the Open Graph section:

title=STATE OF RED BAND ROCKS!
url=http://stateofredband.com
image=http://www.stateofredband.com/images/fb-logo.jpg
description=Covering the best 80's heavy metal and hard rock party songs from the biggest bands of all time.

Do I need to do anything inside the Facebook App to make this work? It is still posting the old information that I want to change.

After you make changes to Open Graph information, it can take Facebook 1-3 days for them to re-scan the information. It's not read at the time the user views the page, but read separately and cached on their end. You can use Facebook's URL debug tool, below, to check what Facebook will see. It also has the benefit of refreshing the cache on their end for whatever pages you scan, which is good to test with.
