HI,
I've enabled Twitter and created an app on Twitter site. However, it is not working correctly yet.

Desktop applications only support the oauth_callback value 'oob' /oauth/request_token

I presume this is because I nned to take certain actions on the Twitter app settings, Can you point me towards the documentation or things to change.

If you haven't already, please see the Twitter Application for Joomla setup guide. Hopefully that will take you through the few necessary steps, but if you still have the same issue, just let me know.

I really like the JFBConnect twitter one page registration page. I'll check if I've posted a JED review and if not do so immediately.
There is a function within the form I don't know how to affect or control,.
In jomsocial multiple profiles I've set the address and this works fine - Twitter has request for User Profile fields - I don't need these or know where to switch them off.

Great! Glad to hear you like that option and are enjoying things. With the v5.2 release, we also added the option for using the JomSocial registration flow. The JFBConnect registration flow you posted is still great, and what we've offered for years, but wanted to let you know about the updated option as well.

In jomsocial multiple profiles I've set the address and this works fine - Twitter has request for User Profile fields - I don't need these or know where to switch them off.

The extra profile fields are showing because you have the User - Profiles plugin enabled in Joomla. That's a basic profile plugin included with Joomla and those fields will show when it's enabled. Disable it and you should be good to go.
